Easy Meal Prep: Korean Quinoa Beef Bowl
As a busy AuditHer, it’s important to get the appropriate nutrition each day. While my weekdays are packed with work and personal obligations, I have little time to prepare whole and fresh meals every day.
Meal prep has truly been a lifesaver for me. I prefer meals that maintain their freshness throughout the week, so I don’t have wilted or soggy lunches and dinners.
Today, I want to highlight my go-to meal prep dish, Korean Quinoa Beef Bowls. These bowls take 15 minutes to prepare, and are packed with flavor! Additionally, they make great leftovers if you prefer to cook your meals daily.
What You’ll Need
1 cup quinoa, dry (and rinsed)
1 tablespoon of olive oil
1/4 teaspoon of fresh ground ginger
3 cloves of garlic, minced
1 pound of lean ground beef (or you can substitute with your protein of choice, just alter the cooking method as needed)
1/4 cup of your favorite teriyaki marinade or sauce (I love the 3 Dragons, Spicy Ginger Teriyaki Sauce)
2 green onions, thinly sliced
Instructions
Place the quinoa in a small pot and cover with 2 cups of water or chicken stock. Bring to a full boil, then reduce the heat to a simmer, cover, and let it cook for 15 minutes.
While the quinoa is cooking, heat the oil in a large pan. Add the ground beef and cook completely. Drain most of the fat once cooked. (Note: you can also cook the ground beef with water instead of oil)
In a separate pan, cook the garlic and ginger for about 1 minute or until fragrant.
Add your teriyaki sauce of choice to the ground beef and let it cook for 3-5 minutes to allow the flavors to set.
Once the quinoa is cooked, remove from the heat and fluff with a fork.
Serve the beef over quinoa and top with green onions.
Tips:
If you’re not a fan of quinoa, you can substitute it with brown rice. You can also eat the ground beef over lettuce instead of grains.
If you prefer, you can add fresh broccoli to the ground beef once it’s fully cooked and serve it with the quinoa.
Feel free to add in your fave veggies, but be sure the veggies you choose store well.
